THE WHITEFACE LODGE UNVEILS ITS SERIES OF SUMMER MENUS INTRODUCED IN EARLY JULY

New "Bento Boxes" Introduced for the Pool and Spa

LAKE PLACID, NY (August 15, 2011) – The Whiteface Lodge, Lake Placid recently unveiled details about its creative summer menus developed for its diverse range of onsite dining areas. The menus were introduced in early July.

Under the leadership of Executive Chef Chris Browne, a new menu debuted in July for Kanu, the Lodge's main dining area, where guests can enjoy a three- or four-course wine-pairing experience. Among the array of delectable appetizers are Steamed Black Mussels in Chardonnay saffron garlic cream with shallots, parsley and grape tomatoes or Beet & Artisanal Goat Cheese Napoleon, which features sliced beets, "Midnight Moon" goat cheese, prosciutto, spicy carrot puree and toasted cashew nuts. Additionally, Kanu's new summer menu offers made-to-order salads, pizzas and calzones as a pre-dinner treat or lunch entree.

For the main course, guests will enjoy Kanu's sumptuous selection of dishes "From the Sea" or "From the Farm." Seafood main courses range from a Lump Crab & Lobster Cake - one of the Chef's special recipes - featuring cauliflower mash and a roasted red bell pepper tarragon coulis. Other seafood entrees include Grilled Atlantic Salmon Fillet, Seared Ahi Tuna Steak and the Lodge's signature Mac & Cheese with lobster. For each of the appetizers and entrees, a wine-pairing suggestion is offered.

Kanu's wine list has been awarded Wine Spectator Magazine's "Award of Excellence" for five consecutive years, a testament to its depth and breadth as it represents wine producers from all over the world, both large and small, as well as local northern NY vineyards. All of the wines are selected by the Lodge's highly expert Sommelier, Scott Waller.

"When I worked with our talented food and beverage team to create the new summer menus, our goal was to develop dishes that present a clean, modern perspective on classic Adirondack fare. For example, the Kanu entrees feature lighter fare accented with three or four seasonings," said Executive Chef Browne. "Additionally, we are committed to working with local and regional artisans who provide us with the freshest and finest quality in produce, cheese, spirits, beer and other important ingredients."

One of the most popular appetizers in the Kanu Lounge -- which will continue throughout the year -- is the Hand Crafted Truffle Salt Fries made with truffle oil, aged parmesan, and malt vinegar aioli. Other tempting pre-meal "Persuasions" include a Chilled Prawn Cocktail and the Classic Beef Carpaccio.

The Kanu Lounge offers a more relaxed atmosphere and menu, where guests may choose to enjoy snacks or meals as they sit at cozy tables or in comfortable leather couches and chairs configured "conversation-style" around large fireplaces. Guests have an opportunity to choose from a variety of "Handcrafted Soups & Salads" such as The Ahi Tuna Nicoise Salad, the Char-Grilled Steak Tip Salad, the Maine Lobster Salad or the Lodge's signature Caesar. Each day, Chef Browne offers a "Market Soup" to complement any of Kanu Lounge's appetizers or entrees.

For lunch or a light dinner, guests may select from a tempting range of pizzas and calzones "From the Hearth," including a Margherita Pizza, a Prosciutto Calzone or the "Chef's Market Pizza or Calzone" (a daily special). For "Lounge Burgers and Sandwiches," guests can enjoy a Pulled Pork Sandwich, a Grilled Chicken Sandwich, a classic Kanu Burger or a new item introduced by Chef Browne--a Lump Crab & Maine Lobster Burger. Finally, in the evening, the Kanu Lounge's entrees offer a choice to suit any discerning palate, such as a Grilled NY Strip in a Porcini Crust, a Grilled Atlantic Salmon Fillet, a Roasted Free Range Chicken Breast and the Lodge's classic Mac & Cheese.

The Kanu Lounge features a robust selection of wines, spirits and other beverages to accompany any hors d'oeuvre, pizza, calzone, salad or entree.

This summer, the Lodge is proud to introduce a new "Bento Box" program where healthy lunches and snacks can be ordered and enjoyed poolside or in the onsite 5,800-square-foot Spa. There are separate menus for kids and adults. Kids can choose from Chicken Fingers, Pasta with Marinara Sauce (or Butter) or a Traditional Hamburger, with side dishes featuring potato chips or carrots & celery sticks. For adults, the Bento Box selections range from a Pulled Pork Sandwich with NY BBQ Sauce, the Lump Crab & Maine Lobster Burger or a Grilled Chicken Sandwich, among others. Side dishes include cole slaw, potato salad or a petit green salad. All Bento Box meals include a selection of seasonal sliced fruit.
